– 3 bunches broccolini, cut down so only 1 inch of stem remains
– ¼ extra-virgin olive oil
– 1 orange, zested
– 1 lemon, zested
– 1 lime, zested
– 1 teaspoon minced garlic
– 2 Tbs freshly grated Parmesan cheese, plus extra for garnish
– 1/2 teaspoon sea salt
– ½ teaspoon freshly ground black pepper


1. Preheat oven to 375 degrees.

2. Arrange prepared broccolini on a baking sheet in a single layer. Drizzle with olive oil and sprinkle with salt and pepper.

3. In a small bowl, combine garlic, orange zest, lemon zest and Parmesan cheese. Sprinkle cheese mixture evenly over broccolini.
Roast broccolini for 6-8 minutes until cheese has melted and broccolini has started to soften, yet remains slightly crunchy (note: do not over-roast).

4. Remove from oven and top with additional sprinkle of Parmesan cheese. Serve immediately.
