Blueberry Jam Seed Bread

Breakfast is the most important meal of the day, right? We hear this statement from childhood through adulthood yet, do any of us really know why eating breakfast is important for the body? And, who has time to create a healthy, delicious meal first thing in the morning when all hell is breaking loose getting out of the house?

Eating a morning meal kick-starts your metabolism, helping you burn calories throughout the day. Eating a healthy breakfast also breaks the ‘overnight fasting period’ to keep your energy levels up during the day. Do you need to prepare a 3-course meal with every major food group? No. A simple, quick and balanced bite to wake up your body, mind, metabolism and muscles is really all you need.

Here is one of our favorite recipes with absolutely zero added sugar, a plant protein boost and a fun way to experiment with gluten-free and dairy-free products.

CK Blueberry-Chia Seed Toast

Blueberry Jam Ingredients:
2 cups fresh organic blueberries (or 1 cup frozen)
1 teaspoon cinnamon
1 teaspoon freshly grated ginger
1/4 teaspoon Himalayan Pink Sea Salt
A sprinkle of ground nutmeg
2 Tablespoons chia seeds

Toast Ingredients:
2 slices of gluten-free seed bread (our favorite can be ordered from Happy Belly Bakery – it is delicious! Contact them directly to order), toasted
– plus-
2 tablespoons Kite Hill dairy-free almond milk cream cheese (available locally at Whole Foods in Hingham)

To prepare the Blueberry Jam:
Combine first 5 ingredients in a small saucepan and cook (covered) over medium heat for 15-20 mins, stirring frequently, until blueberries ‘pop’ and begin to breakdown.
Remove from heat, stir in chia seeds and let sit (covered) for 15-20 minutes more until cooled. (Jam can be stored in an airtight container in the fridge for up to one week).

To assemble Blueberry-Chia Seed Toast:
Remove seed bread slices from the toaster or toaster oven. Spread 1 tablespoon Kite Hill cream cheese onto each piece of seed bread. Arrange toast on an individual serving plate and top with heaping tablespoon (or 2!) of cooled jam. Sprinkle with additional cinnamon, if desired, and enjoy knowing you are starting your day with a healthy metabolism and brain boosting meal.
