1 cup smooth all-natural peanut butter
2/3 cup local honey
1 teaspoon vanilla extract
1/2 teaspoon sea salt
2 1/2 cups gluten-free rolled oats
1/3 cup dairy-free carob chips
3 Tablespoons crushed peanuts
1 Tablespoon sunflower seeds


1. Line a baking sheet with parchment paper.

2. In a large bowl, mix together peanut butter, honey, vanilla and salt.

3. Add in oats, carob chips, peanuts and sunflower seeds and fold together.

4. Pour mixture onto baking sheet and press out onto the pan. Cover with a second sheet of parchment paper and use the back of a measuring cup or rolling pin to flatten evenly.

5. Chill in the fridge for at least 2 hours (overnight is even better) and then slice into bars. Store bars in an airtight container in the fridge for up to 1 week.
