Grilled-Guacamole

If you have never grilled an avocado, you are in for a delicious surprise.

Grilling infuses avocado with a smokey taste and a creamier texture and takes your guacamole game to a whole new level.

Serve up this twist on a traditional favorite at your next tailgate party, football Sunday game food table, gathering around the fire pit or literally in a bowl all by yourself power-watching Dexter on Netflix (we wouldn’t know anything about that, though…) and enjoy the incredible health benefits of everyone’s favorite fruit (yes, it’s a fruit – technically a berry).

CK Grilled Guacamole
Serves 2

1 ripe (but still slightly firm) avocado
olive oil
Himalayan Pink Sea Salt
black pepper
1 lime, juiced
1 garlic clove, minced
1 teaspoon cilantro, minced
1 teaspoon red onion, minced
2 small cherry tomatoes, small dice
100% stone ground corn tortilla chips

Preheat gas or stovetop grill.

Cut avocado in half and remove pit. Rub both avocado halves with olive oil (to prevent sticking to grill), sprinkle with Himalayan Pink Sea Salt and black pepper and place flesh-side down on prepared grill for 3-5 minutes (depending on grill heat and intensity). Check to make sure avocado is not sticking or burning and return to grill for an additional 3-5 minutes until slightly charred.

Remove from grill and scoop out grilled avocado flesh (discard skins) into a small bowl. Add the lime juice immediately and, using the back of a fork or small potato masher, combine avocado and lime juice. Once combined, add prepared garlic, cilantro, red onion, diced tomatoes and more Himalayan Pink Sea Salt, to taste. Combine all ingredients until mixed together thoroughly.

Serve with 100% stone ground corn tortilla chips.
