Ingredients:

• 5 cups kale, washed and cut in thin strips
• ½ cup dried cranberries
• ½ cup sliced almonds
• ½ cup diced red onion
• ½ cup cherry tomatoes
• 2 T. feta cheese

Dressing:

• Juice of 1 lemon
• ¼ cup olive oil
• ½ cup balsamic vinegar
• 2 garlic cloves
• ½ t. sea salt
• ½ t. black pepper

Method:

Mix together dressing ingredients.
Mix kale, cranberries, tomatoes, almonds and onion in bowl. Toss together and coat evenly. (Best when refrigerated 6 hours overnight)
