It’s almost the Most Wonderful Day of the Year – that’s right…MOTHER’S DAY. What better opportunity to spoil the woman in your life that literally does everything for you (you know she does) – and all with grace, silliness, a smile and a hug (ok, most of the time?). Many of our CK team and tribe members are moms and we all agree that being appreciated and loved is the BEST gift to give a mom this weekend…but, a creative, healthy and delicious breakfast-in-bed would be pretty awesome too. Here are a few ideas for you to surprise mom on Sunday with the gift of clean, healthy nutrition. She spends a lot of time nourishing and feeding your body, mind and soul and this weekend is the perfect time to send a little bit of love and TLC back in mom’s direction. Happy Mother’s Day to all of the moms in our community!

banana chia toast

Our CK Banana Chia Toast is a protein-packed way for any mom to start a busy day. Start by toasting up your favorite bread (whole grain or gluten-free are our personal favs) and top with all-natural, freshly-ground almond butter (Whole Foods has a self-serve grinder so you know you are getting only the real thing with no artificial additives). Arrange thinly sliced organic banana in rows and add a drizzle of local, organic honey (perfect for helping with seasonal allergies) and a sprinkle of chia seeds and a little fresh orange zest. Cut in half diagonally and surprise mom with the gift of clean nutrition.

Our CK gluten-free, dairy-free, low-sugar fluffy vegan pancakes are a crowd pleaser (not just for mom!) and are a cinch to whip up this Mother’s Day weekend. Made with 100% all natural, organic, hand-pressed locally made almond milk from Nectar and Green and topped with fresh, organic blueberries, you can surprise mom and feed the whole family at the same time.

1 cup gluten-free flour
¼ teaspoon brown sugar
1 teaspoon cinnamon
2 teaspoons gluten-free baking powder
1 cup Nectar and Green Maple almond milk
1 tablespoon olive oil (or substitute coconut oil)
1 tablespoon water
1 teaspoon 100% pure vanilla
coconut oil
1 cup organic blueberries

* In a medium sized bowl, combine flour, sugar, cinnamon, baking powder and mix until combined.

* In a small bowl, mix almond milk, water, vanilla and oil and whisk to combine. Add to dry ingredients and incorporate gently until combined (do not overmix – batter should be a little lumpy).

* Heat a large skillet over medium-high heat and add a touch of coconut oil to prevent pancakes from sticking.

* Once pan is hot and oil is melted, pour ¼ cup of batter into skillet and cook until bubbles begin to form on the surface.

* Sprinkle pancake with blueberries and carefully flip pancake with a spatula to cook until golden.

* Remove from skillet to plate and top with 100% pure maple syrup, dairy-free carob chips, additional organic blueberries or jam.

Fruit & Almond Toast

This gorgeous Fruit & Nut Toast is one of our favorites during the summer months when berries are ripe and delicious everywhere you turn – spring is in the air and it’s time to start channeling the flavors of warmer weather so, why not kick off this Mother’s Day with this beautiful ray of sunshine on mom’s breakfast-in-bed tray? Start by toasting up  mom’s favorite bread (we use seed bread here), add a generous layer of her favorite nut butter (almond butter is what we are currently reaching for) and top with beautiful rows of her favorite sliced fresh fruit. By simply adding a sprinkle of freshly zested lime, this toast is elevated to being a morning snack worthy of a Supermom.

Strawberry Smoothie Bowl

Our CK Strawberry Almond Smoothie Bowl could not happen without our amazing partnership with Carley Dunphy and her rockin’ local company The Blendah Babes. Delivering pre-packaged frozen, ready-to-blend, organic smoothies (simply add your favorite liquid) to your doorstep (or found in the frozen food section at local shops like The Fruit Center in Hingham), you can create some serious smoothie bowls without ever changing out of your jammies. This bowl is pretty-in-pink just for mom and features a scoop of freshly-ground almond butter, unsweetened coconut flakes, organic banana, organic strawberries and a sprinkle of gluten-free granola. Here we blended up The Blendah Babes “Strawberry Fields Forever” smoothie flavor with unsweetend, all-natural coconut milk and made it extra thick. Thinking outside of the box by putting this smoothie in a bowl is the sort of thing mom does every single day – this weekend, surprise her with your super creative way of serving up her morning smoothie.
