We are sharing our recipe for our client’s favorite Overnight Oats flavor in the hopes that even more of our CK community can start the day with a quick, delicious, filling and energizing breakfast.

CK Peanut Butter Banana Overnight Oats
1 cup unsweetened coconut milk or almond milk
1/2 cup gluten-free oats
1/3 cup coconut milk yogurt (vanilla)
1 heaping tablespoon chia seeds
1 teaspoon pure vanilla
2 tablespoons dairy-free carob chips
Pinch of Himalayan Pink Sea Salt
Pinch of ground cinnamon
1/4 Banana, thinly sliced
2 heaping teaspoon organic peanut butter, divided equally
2 8oz reusable glass mason jars
Method:
Combine first 8 ingredients in a medium sized bowl.
Divide evenly into mason jars, leaving about 1 inch of room at the top.

Place peanut butter and banana on top of oat mixture inside jars and seal with lid.
Place in refrigerator overnight.

Enjoy in the morning (lasts 2-3 days in fridge). Can be enjoyed cold or warmed (we prefer it cold!)
