CK Peanut Butter Banana Overnight Oats

Ingredients:
1 cup unsweetened coconut milk or almond milk
1/2 cup gluten-free oats
1/3 cup coconut milk yogurt (vanilla)
1 heaping tablespoon chia seeds
1 teaspoon pure vanilla
2 tablespoons dairy-free carob chips
Pinch of Himalayan Pink Sea Salt
Pinch of ground cinnamon
1/4 Banana, thinly sliced
2 heaping teaspoon organic peanut butter, divided equally
2 8oz reusable glass mason jars

Method:

1. Combine first 8 ingredients in a medium sized bowl.

2. Divide evenly into mason jars, leaving about 1 inch of room at the top.

3. Place peanut butter and banana on top of oat mixture inside jars and seal with lid.

4. Place in refrigerator overnight.

Notes:

– Enjoy in the morning (lasts 2-3 days in fridge).
– Can be enjoyed cold or warmed (we prefer it cold!).
