1 beet, roasted, peeled and cut into bite-sized pieces
1 15oz can chickpeas, drained and rinsed
1 Tbs freshly squeezed lemon juice
1 clove garlic, minced
2 Tbs tahini
1/4 cup olive oil
sea salt
1/2 teaspoon cumin
water, as needed
1 Tbs pumpkin seeds, toasted
1 teaspoon Everything But The Bagel seasoning


1. Add beet, chickpeas, lemon juice, garlic, tahini, salt, and cumin in food processor fitted with a metal blade. Combine ingredients.

2. With motor running, slowly drizzle in olive oil. Add water, little by little, as needed to reach desired consistency.

3. Scoop prepared hummus into a serving bowl and top with pumpkin seeds and Everything But The Bagel seasoning.

4. Serve with pita chips and vegetable sticks (carrot, celery, peppers).
