Grass-fed, slow-braised boneless short ribs, housemade risotto verde and roasted seasonal vegetables for 2 (gluten-free).

To serve: simply place short ribs and extra sauce in oven-proof dish in 350 degree oven for 10 minutes (or until warmed throughout).  For best results, place risotto with 2 tablespoons water in a medium saucepan and gentle warm over medium heat, stirring frequently.
