Being a vegetable lover I automatically assumed that my children would love them as much as I do… boy was I wrong. Once my son could start communicating he would instantly let me know that anything green was not his thing. Over the past couple of years I have found some fool-proof ways to get my kids to eat vegetables … and actually enjoy them.

Smoothies! You can throw basically any vegetable in a smoothie and mask the taste by using fruit, nut butters, & clean protein powders. My two year old enjoys a green smoothie almost daily with me. I regularly load his smoothies up with kale, spinach, cucumber, beets, even frozen zucchini (Trust me- you don’t even taste it). Kids sip healthy smoothies down like a milkshake and you can relax knowing they are getting the vitamins and minerals they need.

Puree veggies into sauces. My mother taught me this trick and it always works! Whenever I am making my son pasta I blend up some healthy vegetables and mix them in with his marinara sauce. You can use asparagus, carrots, zucchini, spinach- anything you have at home. When they are blended and mixed in with the sauce the taste is hidden but the nutritional value remains.

Use healthy spreads for dipping raw veggies. Some of my favorite easy combos are dipping carrots in hummus or cucumbers & peppers in guacamole. Dipping is always fun for kids and adds a whole new level of flavor to the food.

Involve your kids in your healthy eating process. Bring them grocery shopping and have them help you touch & pick out fresh produce, wash it when you get home, and prepare it for meals together. Making healthy cooking a fun activity you do together will entice them to eat the foods they are making with you.
